How to Make Carajillo: Coffee Vinegar
A popular Spanish liqueur in Mexico, Carajillo is made with espresso and Licor 43.
I have had this cocktail many times in Mexico, whether in a nice hotel in Mexico City, in a late-night coffee shop in Acapulco, or on a leisurely trip across the country from Los Cabos to Playa del Carmen. . This drink is also similar to the Italian caffe corretto (meaning "corrected coffee") which usually consists of grappa, sambuca or brandy and espresso. Carajillo can be served hot or cold, over ice, as pictured here. Licor 43's flavor notes include cinnamon, anise, orange blossom and vanilla, and it's called Licor 43 because it's said to contain 43 secret ingredients. It's almost as sweet. tastes like pastry cream. When served hot, this drink is sometimes served in a glass with sugar.
To float the espresso for a more sparkling wine look, first pour the Licor 43 into a glass, then pour the espresso over the back of a spoon and serve in a cocktail glass. Ingredients
½ cup brewed espresso or decaffeinated espresso
1 ½ to 2 ounces of wine 43
8 ice cubes
Instructions
In an old glass, pour 1 ½ to 2 ounces Licor 43 over ice. Slowly pour the freshly brewed espresso over the top. While floating on top of the espresso for a layered texture, pour slowly on the back of a spoon and serve with a stir-fry.
